Not sure what I am doing!

Well, I am about to take on something new to me. What most likely wouldn't scare the younger generation, is now about to give me butterflies! I am going to attempt to learn how to navigate and post to my new blog. I am hoping those of you checking into it, will stick with me as I learn this process - cause I am hoping this can be a fun journey for us all!
I will be learning how to organize my page and put things together, in the meantime, I suppose it will just show up as new posts.
Dinner seems to be a challenge for most women I talk to. Not so much preparing the dinner, but figuring out what to make for dinner! After asking the husband, the kids, and whoever else is in the house, and getting the same reply - "I don't care", every woman heads off to the kitchen to find something to make. I have often thought to myself, if I suggested a can of dog food for dinner, would they be so indifferent about what I prepared that night? SO - with that in mind, I am going to try to have a new recipe for each night to help the busy woman simplify. Not necessary to ask everyone else anymore! I will also try to make these recipe ideas healthy and when possible, add the health content for you as well. Breakfast is also another challenge for a lot of women I know - so why not try some new ideas for breakfast? I will try them out too!
Dinner tonight! Try some Enchilada Cassarole - call them whatever you like, squares, mexican lasagna....you name it - your family will eat it!
Brown about 2 pounds of ground beef in a pan with one diced onion and a couple of garlic cloves minced in. In another pan, mix together one can of cream of muchroom soup and one can of red enchilada sauce, one small can of diced chili's, and 1/2 cup of milk, bring that to a simmer. Spray your 9x13 pan with olive oil cooking spray and sprinkle a little of the hamburger and sauce on the bottom of the pan, add a couple of tortillas to cover the pan, then repeat for a couple of layers - with the final layer pouring all the remainder of the sauce over and topping with cheese. Bake at 350 degrees until the cheese is bubbly - top each serving with sour cream and sprinkle chopped green onions. Add a veggie and salad for the side servings and whalla! My family loved this meal - hope yours will too!
